Site overview: 
The domaine de Fonds Saint-Jacques is a sugar refinery that was founded by the Dominicans in the middle of the seventeenth century. The site includes a convent, a chapel, a refinery and a rum distillery. Father Jean-Baptiste Labat, who lived in the West Indies between 1693 and 1705, took over the sugar refinery and helped it prosper. Nowadays, this site can be visited during guided tours, accompanied by storytelling.
